INTRODUCTION

1.1 Background of the Study

Food safety has become a global concern due to its direct impact on public health and economic development. Pork, being a widely consumed source of animal protein, plays a crucial role in meeting the dietary needs of many households, especially in developing countries. However, pork is also one of the most susceptible meats to contamination due to poor handling, unhygienic slaughtering practices, and inadequate storage conditions (Grace, 2015).

The marketing of pork involves a chain of activities including slaughtering, processing, transportation, and retailing. Each stage of the chain presents potential hazards if food safety protocols are not adequately followed. This has implications not only for public health but also for the income and livelihood of pork marketers, as consumer trust and demand are largely influenced by perceived safety and quality of the product (Havelaar et al., 2010).

In Nigeria, where pork consumption has steadily increased in urban and peri-urban areas, concerns over food safety remain significant. Informal markets dominate the pork sector, with minimal enforcement of food safety regulations. This informal nature creates challenges for government agencies in monitoring and enforcing health standards, thereby increasing the risk of foodborne illnesses and economic losses (FAO, 2020).

The economic analysis of food safety among pork marketers seeks to explore how adherence to food safety standards affects profitability, consumer behavior, and market sustainability. It also identifies constraints faced by marketers in implementing food safety measures and evaluates the cost-benefit implications of safe pork marketing.

1.2 Statement of the Problem

Despite increasing awareness of food safety, many pork marketers still operate in environments that lack proper sanitation, refrigeration, and inspection. These conditions raise the risk of contamination and compromise consumer health. Foodborne illnesses caused by unsafe pork products lead to economic losses through reduced consumer demand, medical expenses, and loss of productivity (WHO, 2015).

Moreover, pork marketers often lack the knowledge, training, and financial resources to implement safety practices. The lack of effective regulation and monitoring further exacerbates the situation, undermining market confidence and profitability. Thus, there is a need to assess the economic implications of food safety compliance among pork marketers and understand how food safety practices influence their income, operational costs, and market performance.

1.3 Objectives of the Study

The main objective of this study is to conduct an economic analysis of food safety among pork marketers. The specific objectives are to:

  1. Examine the level of awareness and adoption of food safety practices among pork marketers.

  2. Evaluate the economic implications of food safety practices on the income and profitability of pork marketers.

  3. Identify the challenges faced by pork marketers in ensuring food safety.
